New season, new menu

Soft light pierces the clouds and days are fair and mild – there can be no doubt that spring has arrived in Paris. Along with the warmer weather comes an abundance of tender green buds that will soon open to produce colourful displays of blossom.  There is also a steady procession of new stems and leaves that conceal the peas, new turnips and young carrots that are already part of our new restaurant menu. And, we're delighted to announce that we have been awarded two Michelin forks this year!

Our spring menu

"Beautiful seasonal products, loaded with freshness and passion". These are the words of Chef Rémy Bérerd as he presents a new menu that will delight your taste buds from March 20th. Like all our chef's creations, the menu combines elegance with authentic flavours. Dishes are beautifully presented with regard for the true flavours of ingredients. Vegetables, spices and tart notes are all present in a colourful selection that returns to the classics of the Mediterranean via original and delicious creations.

Cabillaud à l’huile de vanille • petits pois et Granny Smith • émulsion de lime

Espadon mariné aux épices douces • légumes pickles • céleri crémeux

Sunshine on a plate

In Rémy's expert hands, Sicilian arancini stuffed with smoked eel, roasted pork loin accompanied by Kalamata olive cream, and smoked duck breast and white asparagus enhanced by a whipped pomegranate juice sabayon are created with flair and attention to detail. There's a certain lightness to this perfectly balanced menu that will keep gourmets satisfied throughout spring. The gnocchi that accompany the Piedmont veal fillet are served with candied lemon while delicate cod is dressed with vanilla oil and served with petit pois and sparkling Granny Smith apples. The desserts also vary according to the flavours of the moment and the mood of our Chef. Can we tempt you with a light raspberry mousse or a confection of chocolate and peanut butter? And we couldn’t forget to mention the pastries of Hugo & Victor, new partners of the Roch Hotel & Spa. Finally, it's with great pleasure that we remind you that our restaurant is now an entry in the 2018 Michelin Guide – with two “Forks”! A huge thank you to Rémy and his immense talent.
