At the source of this adventure flows an astonishing and singular fragrance; Couleur Vanille. This eau de parfum springing from the dreams and fantasised journeys of the perfumer Aliénor Massenet combines the sweetness of vanilla and the tartness of bergamot, with more sustained notes of bittersweet immortelle and vanilla-like benzoin, all enhanced by an iodine saltiness and the freshness of a sea breeze. Thus, Couleur Vanille was born.
Scents and flavours
The adventure, delightful as it is, could have ended there if our chef, Rémy Bérezd, had not ben captivated by this exquisite fragrance... Couleur Vanille immediately inspired him to create a seasonal menu rich in surprises and bursting with the most evocative flavours. Let's start with a pea and seaweed tartare, Granny Smith apple and vanilla and a bergamot oil and lemon balm émulsion. Next come seared scallops with celery mousseline, creamy vanilla mousse and roasted hazelnuts. We conclude with the base notes of a Bruyère honey biscuit and its creamy vanilla, coconut foam and jasmine ice cream. A true treat for the senses, this Couleur Vanille menu can be enjoyed exclusively from March 12th to May 12th, 2020, in the restaurant of your Roch Hotel & Spa.
